Our ranch en Majadas del Tiétar
Our ranch in Arroyo del Caño,
is located in the Tiétar Valley, Cáceres province
Our extensive property will allow us to increase
the 80 hectares, presently dedicated to the cultivation of olive trees,
in the future.
Our olive trees can be found in the foothills of
Sierra de Gredos. The Spanish ibex our unique Macho Montés overlooks our
work from the craggy mountains. Our property is near the Yuste Monastery,
in the heavenly zone of La Vera, the natural environment where the Emperor
Carlos V withdrew to, overwhelmed by the warlike, political and religious
avatars of his turbulent reign. Here, he chose the best place to rest among
all of the innumerable places of his immense empire, where the sun never
shone.
Our fields look upon the almost perpetual snows
of the Almanzor. They drink the crystaline, clear waters that, due to natural
and granitic causes, come to our land. And the fruit matures beneath the
rays of the blessed Extremaduran sun.
Our position amongst great expanses of raspberries,
orange trees, cherries and tabacco is also singular where, free from all
types of flies and other insects, we reach minimal levels of acidity, incomprehensible
for laboratory experts and analysts. Moreover it is where fruity aromas
and flavors dominate.
The microclimate
The excellent microclimate of the Tiétar Valley,
the specific and careful details of the plantation, the choice of variety
(Arbequina and Cornicabra), the selective “bottle-feeding” watering and
fertilization guarantee environmental conservation.
“Bottle-feeding” irrigation allows selective fertilization
on the basis of analysis of the leaves, which tell us of the true needs
of the plantation’s trees, not the earth’s needs. In this way we maximize
environmental conservation, this being one of our principal
objectives.
Quality
The exquisite and careful treatment of the fruit
during harvesting and transporting, just as the parameters used in milling
and extraction, always at a minimum temperature below 27º C, allows us to
preserve our characteristic fruity flavors and aromas, while maintaining
a high level of natural antioxidants, thereby making our oil PAGO
de los BALDIOS de SAN CARLOS a product
of the highest quality.
We never collect the olives which fall from the
tree, due to early maturation or other circumstances
Olive
oil mill, storage and packaging
We store and package with nitrogen to preserve
the oil in an inert atmosphere. A sturdy investment in the mill, rationally
and technically perfect, with the most modern and sophisticated machinery
obtains the best quality oil. The warehouses, the wide patios, the laboratory,
the tasting room, the refrigerated cellar with stainless steel tanks, maintain
the maximum quality of our oil, preserving it as if it were just pressed.
